Preschool. A place where kids go to learn, make friends, have fun and unfortunately, catch icky viruses, colds, and flu. My family and I are well acquainted with these common illnesses and my boys are like magnets, drawing in every germ. It’s no wonder that these sicknesses spread like wildfire through our home leaving every person that comes in contact, out of commission for days.
About a week ago, my boys finally returned to school after a long and stressful holiday break. I was excited to finally get some alone time, but like most moms, I missed the kids after a couple of hours. As soon as it was time for me to go pick them up, I hurriedly grabbed my coat and scarf and hopped in the car to head their way. I drove like a maniac through traffic, parked the car and as I stepped outside to walk into the school building, I noticed the wind blew with an unforgiving chill that was sure to bring sickness to some unlucky child. As I rounded the corner to the classroom, I walked through the colorfully decorated door with my arms spread wide and a smile that beamed with happiness. However, I wasn’t met with the same enthusiasm. Both boys looked at me with tired eyes and runny noses while they slowly walked over into my arms. These were the first signs of what I like to call the “preschool blues”. That night, as I sat up with DJ on my right side, Arian on my left, both smelling of menthol and eucalyptus rub, I decided that this time around things would be different. No more staying home from school for days with no sleep while passing around the same sickness between one another. We were going to fight this nasty cold together! From this declaration, my flu fighter jelly was born.
The key to fighting illness is to boost the immune system. Therefore, I picked ingredients with high antioxidant and vitamin concentration.
Kiwi - Packed with vitamins C and E, which create stronger white blood cells for immune function
Orange - Full of vitamin C, making it perfect for warding off cold and flu
Lemon - Another boost of vitamin C
Turmeric - Anti-viral, anti-fungal and anti-inflammatory
You will need:
1 tsp turmeric
5 tbsp gelatin powder
Juice the orange and set aside in a bowl.
Juice the lemon and add to the bowl.
Remove the kiwi fruit from its rind and place into the bowl.
With a hand blender, blend kiwi, orange, and lemon juice together.
Add turmeric and mix well.
Transfer mixture to a boiler and add gelatin powder.
Heat on low for about 10 minutes, making sure the mixture does not boil.
Add the mixture to your molds.
Refrigerate for 24 hours.
Take jello from the molds.
Store in the refrigerator.
Have your kids take 1 serving daily!
**These will have a jello-like consistency. If you’d like a harder result, use a denser fruit like grape juice, apple juice, or pureed strawberries.
